Hoshigaki - dried persimmon is a seasonal autumn and winter snack known for its sweetness and chewy texture. Complex and concentrated in flavour, it pairs beautifully with deep-steamed fukamushi sencha.
Vibrant green, fukamushi sencha is known for its grassy, fruity character and a slightly bitter, refreshing taste. While it can have umami and sweet undertones, it more often leads with herbal, bright and citrusy notes.
When dried, persimmon develops a natural crystallization of sugar on its surface, which has a clean, sweet taste, while the interior remains soft, fruity and slightly vegetal. Its dominant stone-fruit and caramel taste complements the tea’s rich, smooth body, creating a balanced and satisfying pairing.
