Nama yatsuhashi – a traditional confectionery from Kyoto – is made of thin mochi sheets folded over smooth red bean paste filling. Lightly dusted with cinnamon, it has a soft, delicate texture and a subtle flavour that allows the filling’s refined sweetness to stand out. Served with matcha, it complements the tea’s richness, depth and astringency. The sweetness of the red bean paste also acts as a palate cleanser, softening the characteristic fresh, mineral, and slightly bitter notes of asamushi sencha.
